I think Tatum's had enough success in his career that he's beyond a "typecast" situation. It could be that he's simply got so much other stuff going on and more interesting offers coming in that he's not as keen on Gambit any more.

It seems fishy. He was at San Diego promoting it and now a week later, he is done. It costs a lot to do that type of promotional work, so I am wondering what exactly happened. I vote for Joe Magnila from True Blood as Gambit.
