So I Googled 'Morten Andersen Oysters' but nothing came up. What was the bit?
One of the pregame shows (I THINK it was a pregame show, it might have been on one of the All Madden specials) did a piece on him being a bit pudgy foreign born kid who somehow ended up in the biggest sport in America. He took the reporter on a "day in the life" trip around New Orleans (when he was playing there) going down Bourbon St. etc.
The piece ended with him in a hot tub eating a plate of fresh oysters for in his words "on and off the field performance" (Oysters are seen as an aphrodisiac by some) while giving the camera a "come hither" look. Hilarious to my teenage sensibilities at the time.
