It was while back - you know, the one with all the ladders by the entryway? That one, because you knew they were instrumental for a spot at some point in the show. Plus, it looked sweet.
WrestleMania X7's set was the best ever. Everything about that PPV was the best. Outside of the Austin heel turn, it was the best WWF PPV ever. Atmosphere, sets, wrestling, announcing (I'm looking at you Paul E.), it was all awesome.

I agree with the KOTR chair (especially during the Angle/Shane street fight when Angle slammed Shane's face into the leg of the chair and neither JR nor Heyman could figure out what it was... damn I miss Heyman.)
I also liked Backlash 2000 if only to see Matt Hardy jump off the scythe, and to see one of them broken during the Hardcore match.
As for new submissions:
-The back alley from Royal Rumble 2000 (I'm surprised the taxi above the entrance wasn't used in a spot)
-The double ramp from InVasion
-The pile of cars from Over the Edge 97 or 98 (whichever one had Dude Love and Stone Cold in the main event)... that match wouldn't have been the same without the car spots.

Second show in a row that I thought wasn't too bad -- the matches were fun for three-minute throwaway whatevers, and the promos were, by and large, not atrocious.
