Batista v. Edge v. Undertaker: Edge manages to squeak out a win.
Trips v. Jeff: Yeah, like I believe Trips is going to lie down for the Rainbow-Haired Warrior. HHH wins clean, Jeff gets the A-for-effort "rub."
ECW Four-Way: I'd like to think Punk is going to get a win against all odds, but I have no basis for faith in WWE. I'm going with the worst-case scenario and say Big Daddy V wins.
Michaels v. Kennedy: Kennedy cheats to win to set up a rematch at the Rumble.
Finlay v. Khali: It doesn't really make sense to have Khali do his usual destruction on Finlay when they're trying to build him up as a face. But I can't see them jobbing him to Finlay after all the people who have already had to put him over. Khali wins.
Mickie v. Beth: Not much to say here. Beth retains.
Rey v. MVP: If anyone takes the belt off MVP, it ought to be Matt when he returns. Rey doesn't need the belt. So I'll say Rey has a strong showing, but MVP takes an intentional DQ or countout to escape with the belt.

Orton v Jericho: Orton, because nothing the WWE does makes sense
Batista v Edge v Undertaker: Edge fakes an injury, lets the other two beat each other up, allowing Edge to swoop in and get the win.
HHH v Jeff: Jeff gets pounded on for 10 minutes, mounts a comeback with many near falls, goes for the swanton, misses, gets pegigreed and pinned.
ECW match: Punk & Kane. The best you can hope for in a match involving Mark Henry is that they keep it short.
Michaels v Kennedy: Probably fantasy booking on my part (sorry CRZ), but Orton gives Michaels the RKO, allowing Kennedy to get the pin.
Finlay v Khali: Khali. Hopefully Finlay stiffs him a few times just for fun.
Mickie v Beth: Beth.
Rey v MVP: Back and forth for the entire match. After MVP cheats to get the advantage, Matt Hardy clocks MVP, allowing Rey to hit the 619 for the win.

For the most part, the Royal Rumble title match is usually irrelevant (Lesnar/Holly anyone?), so there's no reason they couldn't book Y2J/Hardy for that show.
OK, so my picks...(which I should have done in my first post...too busy being a wiseass):
Orton/Jericho: Jerico, via Flair-terference.
Batista/Edge/Taker: Batista retains. Edge goes on to win the Royal Rumble.
HHH/Jeff: Jeff. Just so HHH can have something to hold over the smarks.
ECW Title: Punk retains.
HBK/Mr. K: HBK, and I'm smelling squash.
Finlay/Khali: Finlay, but Hornswoggle gets brutalized during the match, which will actually elicit an emotional response from Vince.
Mickie/Beth: Beth.
Rey/MVP: MVP, after Matt's interference backfires.

HHH beats Hardy. Because he's HHH.
Edge over Batista and Taker.
Punk retains.
Beth beats Mickie, but the feud is not over.
MVP retains. His feud is with Matt, and should have a Wrestlemania blow-off.
Michaels kills Kennedy.
Finlay beats Khali through leprechaun magic.

Batista to retain against Edge and 'Taker. I think that this could be the match of the night.
CM Punk & Kane to win the tag team spectacle.
Hardy to 'overcome the odds' and, to paraphrase JR, win 'the most important match in his entire life'. I figure the Rumble gives Hardy the chance to have a nice little title match without it having to be the main focus of the PPV.
Michaels and Kennedy to go to a no-contest, DDQ, draw or something.
MVP to retain in what could be a decent match.
Khali to beat Finlay. I'm running with the idea that the WWE will want to get a nice video package together of Khali squashing people in matches like this leading up to 'Mania for a possible Hogan showdown.
Beth to beat Mickie.

IMO they're using the title feud to get him back over (as little as he truly needs it) in order to eventually have him work the upper midcard putting new talent over. He doesn't need a title reign at this point to do that.
Most likely Edge is your new World heavyweight champion via heel oportunisticness, although there is a strong chance Batista retains to set up an edge/taker feud leading into mania, which is a feud that wouldn't need the belt to have tension.
Jeff is beating hunter, mark my words. Hunter "gets his job back" winning the rumble.. maybe from position 1 for good measure. This is my prediction for match of the night.
Micheals over Kennedy through either superkick or DQ. This match will be better than expected, but cut way short on time.
I don't care about the rest of the card.
