I find that I can't watch all of the TV that I'm hoarding. Plus, I'm not entirely sure about how this stuff can be viewed in the future on the off chance that my DVR dies. So - instead of trying to build the ultimate all time library, I am just using it to store stuff that I may get back to (all episodes of Viva La Bam, for example).
There is software to let you burn stuff to DVD so I assume there is a legal way to do all of that - but I haven't looked into it yet. My DVD burner is still in San Diego with my wife

MySonicDVDPRO or something like that. Everything I've read says it sucks.

In either case, removing the DRM from your .tivo files may be necessary to ensure a clear picture and sound. Doing so is apparently left as an exercise for the reader.
