I'm following (click the name to go to their twitter page where you can add them should you wish):
@pvponline-webcartoonist Scott Kurtz, who does the comic Player Vs. Player. @krisstraub-webcartoonist Kris Straub, who does the comics Starslip and Chainsawsuit. @loresjoberg-Lore Sjöberg, writer of the Alt Text column at wired.com / webcartoonist of the comic Bad Gods. @jonathancoulton-Jonathan Coulton, musician/internet superstar. @jephjacques-Jeph Jacques, webcartoonist who writes the strip Questionable Content. @paulandstorm-Paul & Storm, professional singing persons. @JohnCleese-yes, John Cleese. @zefrank-internet personality Ze Frank. @hijinksensue-webcartoonist Joel Watson of Hijinks Ensue. @guigar-webcartoonist Brad Guigar of Evil Inc.. @hodgman-author, actor, and Resident Expert John Hodgman. @Drdrew-Dr. Drew of "Loveline". @stephenfry-British comedy writer / vocal talent Stephen Fry. @wigu-webcartoonist Jeffrey Rowland of the comics Overcompensating and Wigu. @asym, the staff of Asymetric Publications, LLC, the company responsible for the Kingdom of Loathing game. @jim_sterling-writer for video game website Destructoid.com; also one of the hosts of the Podcastle, Destructoid's European podcast. @THE_REAL_SHAQ-as far as I can tell, the real Shaquille O'Neal, twittering from a cell phone. While not every celebrity on twitter really is that celebrity, the creators allow a famous person to claim a username from a pretender. @levarburton-likewise, the real LeVar Burton, best known from "Star Trek: TNG", "Roots", and "Reading Rainbow". Has been known to converse with wilw, the esteemed (in geek circles) Wil Wheaton. @rainnwilson-also also, the real Rainn Wilson, from NBC's "The Office".

I am thinking of dipping my toes into the listening end of things, but I'm not sure I can take minute by minute updates of Stephan Fry trapped in a lift (amusing as that must have been). Does Twitter even make sense if you read your feed only once or twice a day or every couple days? When I have tried to read a feed that isn't happening real time, it seems hard to figure out what people are specifically responding to and feels a bit disjointed. If you subscribe do you only see the subscribee's tweets and then have the option to read responses? Sort of like looking at your friends page on blogger or LJ?
Cause I see some people listed here that I wouldn't mind checking out what they Tweet, but I'm still very hesitant. | KJames199

In Canada, you can't get tweets delivered by SMS to your phone (I'm sure there are workarounds, I just don't have one in use) and my work web filter blocks Twitter, so I routinely go 18 hours or longer without checking Twitter. Usually, I just scroll back to where I left off and read updates in the order they came in and it is fine. It might be too much to take in if I was following more people (or chattier people).
As far as responses, you only see responses from people you are also following. If kzim starts a tweet by saying "@rubytrax," I will see it because I am following both CRZ and Kim. But if kzim starts a tweet with "@rainnwilson," I won't see it because I am not following Rainn Wilson.
Some celebrities update several times a day. Others update once a month or less. Same as anyone else.
I think you can always check out what someone's saying without signing up - just check http://twitter.com/jameskalyn (or replace jameskalyn with "THE_REAL_SHAQ" or "pennjillette" or "JohnCleese' or whoever). I'd test it myself, but I'm at work.

Depends on the people and how much they spend replying to other people.
If you subscribe do you only see the subscribee's tweets and then have the option to read responses?
You see the tweets from all the people you subscribe. If it's a replay to someone else, they'll use a @username convention, which twitter automatically links to that person's account. But, because they're so small messages, it doesn't give you a permalink to the exact message they're responding to. So you've have to scan thru the other person's tweets to figure out the conversation, which is a bit iffy at best. There's probably a website that fixes it better, because there seems to be a million twitter related websites.
I think that's why twitter has caught on - after you sign up, you don't really even need to use twitter.com website, because there I use Google Reader to follow tweets. Twitter password protects your RSS feed, and Google Reader still doesn't know how to handle password protected RSS feeds, but you can use a inbetween website like http://freemyfeed.com/ to have it strip away the authentication.
I follow Shaq because Shaq is hilarious (and also like months ahead of me on figuring out how to use twitpic.com) but I don't follow anyone else 'famous' because I don't really care about their lives (unless they are hilarious.) Rather follow people I know, or sort of know, or who only post about their yogurt choices. The other thing is, at 19 people, there's our times where it's enough content for me and I don't need any more. I don't know how people follow 100s of people or whatever.

There is a setting in the preferences to only see the @replies to people you're following. It clears up the clutter quite a bit.
The only "celebrities" I follow are the guys from the Around Comics podcast, DC artist Mike Norton, and Leo LaPorte. I tried following Wil Wheaton, Brent Spiner, and LeVar Burton, but they were tweeting so much it pushed everything else off the screen.
Otherwise I pretty much just follow people I know in real life.

The Star Trek trio of Brent Spiner, LeVar Burton, and Wil Wheaton. John Cleese. Stephen Fry. Adam Savage from MythBusters - This ended up being cool not only because it's Adam Savage and he'll TwitPic behind-the-scenes stuff, but he announced Kari Byron's pregnancy on Twitter ages before any news service or anything like that
Felicia Day. Jonathan Coulton. John Hodgman. Rainn Wilson. John McCain.

I'm currently following 22 people, but all that shows up on my "public" site is the first five recommended individuals I followed when I initially signed up for my account (Wheaton, Shaq, Penn, Rainn, and the NBA) ... I even tried deleting Jillete just to see if that would make the icons "refresh", but no dice (in fact, Jillete's icon refuses to leave!).
