I should have read this earlier! Oh well. Here's what I did this year (it turned out quite all right - maybe all the other people who did Li'l Smokies left the company over the past 12)
GLAZED WIENERS Combine 1 jar (18oz.) apricot preserves and 1/2C (8oz.) mustard in crock pot on LOW Chop up 6 green onions, going as far up the green as you care to Add onions and 2 packages (32oz. total) Li'l Smokies (option: Cheddar Li'l Smokies) Stir, stir, stir Let sit for hours Serve with toothpicks

Feel free to double all amounts above, like I did. Sure, it's $20 for ingredients, but it's the HOLIDAY SEASON, PEOPLE.
I have a feeling this is very similar to the grape jelly/chili recipe Sec19Row53 offered last year (post #12), but THIS recipe I borrowed from a website based on recollections of having this very snack at a friend's house for many years in a row. I had no idea it was so easy!

Romaine lettuce, red & yellow bell pepper, onions, tomatos, croutons, feta and parmesan cheese, and some homemade balsamic vinaigrette on the side.

I have made caramel, raspberry, chocolate (with or without a home make chocolate mousse on top), and black cherry cheesecakes. I'm working on a Key Lime one next.

| #36 Posted on 13.12.08 1507.39 | Instant Rating: 7.83 | Most times I bring the Velveeta/Salsa w/tortilla chips or Velveeta/Hormel Chili w/Fritos, but this year I was tasked with bringing a dessert, so I baked a 13X9 chocolate cake, split it, put the bottom in a clean glass dish, spread chocolate pudding on that, put the top half of the cake on, spread whipped cream on top, sprinkled it with cocoa powder and drizzled it with chocolate syrup. There's probably a name for it, but I just called it "Damn, That's Chocolate".

What's with all the "I signed up for" and "I asked around?" That is not a potluck. That is lunch. No luck is involved. It's only a potluck if you don't know what anyone else is bringing. If everyone brings the same thing and all you have to eat is ice, buns, and a shrimp ring, so be it.
Anyway, I bring the same thing every time:
Salad: 1 can black beans (drained and rinsed) 2 cups kernel corn 1 cup diced celery 1 diced red pepper 1/4 cup of diced onion 2 tbsp chopped fresh cilantro Dressing: 3 tbsp red wine vinegar 1 1/2 tbsp yellow mustard 1/4 tsp salt 1/4 tsp black pepper 1 tbsp oil Mix, refrigerate, and marinate. Can easily be adjusted, doubled, tripled, etc. Travels easily, keeps well, relatively inexpensive, vegan-friendly, can be made en masse, and goes with everything (even ice, buns, and shrimp rings). | CRZ
