I still collect sports cards (mostly baseball and football), but haven't bought many lately due to the rise in prices and drop in amount of cards per pack.
I used to collect key chains when I was younger, so I still have hundreds of them in my bedroom closet.
I also collect XFL stuff, mostly whenever I see something interesting on Ebay.
I collect "Break Beats", old songs that have been sampled by rappers, so named because rappers usually sample the instrumental "break" in the middle of the song for their beats.
I was doing records originally, then switched to mp3s for awhile, now I'm back to collecting records.
Foreign Money. I have something like $23.10 in Canadian money, which I plan to go to Canada at some time in the future in order to spend. The rest is all money in small amounts. I got it all at the gas station I used to work at while it was posing as American money.

The Homies are sitting under my monitor at work, where they're safe from my editor's cat. Up to 62 proper Homies, five Homieclowns (think ICP-style), three Palermos (Mafia stereotypes), a Homie Bobblehead, and three small Homies who aren't turning up on their site.

I used to collect Homies until Series 5 came out. I've got all of Series 1-4 though, somewhere near 100 I think.
There are lots of other things I used to collect: LEGOs, comic books, DragonLance/Forgotten Realms books, Pearl Jam bootleg tapes, concert t-shirts, and Transformers.
The only thing I collect nowadays is beer related, as I like to cut out the side of an exceptionally good six pack, which also must have interesting box art, and stick them up on my wall. My newest is Rock Art Ridgerunner.

Nuclear Winter: Celebrating two years of mediocre posts. I collect SWCCG (Star Wars Customizable Card Game, for those of you not as nerdy as I) cards. I've never counted them, because I have far too many, but I estimate my collection to be around 16000 cards.
I also collect Sobe bottle caps. My favorite one is probably the one that says, "I believe you have my stapler."
I collect uncommon coins, too. The new state coins, I've got a couple silver dollars I've found, some bicentennial quarters, and four new nickels, all different:
1) Big Jefferson on the front, buffalo on the back 2) Two hands shaking on the back (to symbolize the Louisiana Purchase) 3) A ship on the back (to symbolize Lewis and Clark's journey) 4) Big Jefferson on the front, ocean view on the back (again, to symbolize Lewis and Clark's journey)
I neglected to mention one other collection: I collect cancelld (used) bus tickets, receipts, and the like. I'll soon expand that collection to bus maps and stuff.
Comic books. I suppose I could be considered a book collector, but really that's more accumulating than collecting. I also have a small collection of Tarot decks. (No, I'm not a believer, I just enjoy the imagery.)

I collect hats. Or "ball caps" as my wife calls them. I have close to 500. I have one for every NBA, NHL, NFL, MLB (regular cap and batting helmet), MLS, XFL, and 78 different NCAA schools. Since I am a huge Steelers and Kentucky Wildcats fan they comprise the largest contingent of single team hats for me. I have 32 Steelers hats and 27 UK hats. I think it is funny because you can follow the fashion trends with them, like the hats with the two long strings that came from the back of the late 80's. And I have a few hats with the big metal logos from the early 90's, and several leather hats from the mid 90's.
It's a fun hobby for me. Of course the wife hates it because of the 491 hats I own, I have only worn a handful of them. I usually have 3 or 4 I keep in wearing rotation and ones I intend to wear I usually buy two of, so the other will still have the tags on it.
I have around 100 at this point, from all over the world. My friends & family all know about my collection, & they always bring me back shot glasses to add to my collection.
I wish I've actually been to all of the places I have glasses from (Tansania, Fiji, Sweden & many others), but it's cool when my friends & family think of me & bring me a glass when they come back from somewhere I wish I had gone to.
My ultimate plan (when I eventually settle in a house) is to have an artist paint a mural of the world on a wall in my library/study/office & place the various glasses on glass shelves according to their matching country throughout the painting...
I didn't actively set out to collect, but I wound up with two big plastic boxes full of cards from the WWE Raw Deal CCG. If I ever get back into the game (I keep telling myself that I will, but then I remember that I have no money), my "collection" will start again.

My main collection is baseball cards. A good portion of them are from when I was younger, but I still buy some every now and then. I still really enjoy collecting them, but like the first poster said, it's tough because prices have gone up and everyone seems to be looking to make money by getting certain cards. I'd really rather just collect cards I like for the fun of it.
Hot Sauces, Exotic Spices & Salsas - I have two huge racks in my kitchen and will probably need to add more soon. The one caveat is that they have to be sauces, spices & salsas that I would and do actually use.
Polygamy Porter, perhaps? I go through beer phases. Usually, when I am in the mood for something light - it Pacifico. I can't drink Corona or Tecaté anymore, so Negro Modelo or Pacifico is what I drink around house. Outside of that, I.P.A.
