I'm putting together a list of some of the most famous (or infamous?) matches I've either heard about over and over or seen short clips of for years, but have never actually watched beginning to end. My list is below in no particular order.
King of the Deathmatch: Cactus Jack vs. Terry Funk
Wrestlemania 13: Steve Austin vs.Bret Hart
Survivor Series 1997: Shawn Michaels vs. Bret Hart
Bash at the Beach 1996: Outsiders vs. Savage/Sting
I have never seen the Ladder match between Razor Ramon and Shawn Michaels from, what was it - Wrestlemania 10? 11?
I have never seen that war between Flair and Steamboat (other than clips) from back in 89 Wrestlewar
and plenty of others. Almost everything from the last 7-8 years.

To be honest, I can't think of any spectacular, life-changing decision that I've come to at the spur of the moment. I'm more the type to run through things in my head forty-seven times first. Not that I'm saying spontaneity is a bad thing.
