Meh. There are no "angles" in in boxing or MMA. Sure, they try to play up rivalries and things, but it's not the same. So if you've got a REAL money match in pro wrestling, you can afford to sit on it until you've had time to ramp up to it properly. Right now, Joe/Angle has zero buzz outside the TNA fanbase, and if they blow their load on it now, that's the only people who are going to see it and care about it. And, hell, they DO do that in boxing/MMA. The really big fights are booked months in advance so they have time to get the hype machine behind them.

And they could always do it as an inconclusive ending now and leave the big confrontation until down the road.
He might get protected in his matches, but Angle is already scheduled to face Samoa Joe and AJ Styles in the main event of the TNA house show in Philly on November 10'th (as reported on lots of news sites, although Meltzer seems to only list that Angle is added to the house shows in Philly and East Hartford, CT).

I believe Angle mentioned in his press conference that he's healthier now than when he was in WWE.
Really, I wouldn't take anything Angle said in that press conference at face value.
After the past few weeks, I don't take ANYTHING Angle says at face value.

Steve Austin and Rock should've wrestled at No Mercy 2000. Batista and Triple H should've wrestled at New Year's Revolution 2005.
I attended this live on Sunday night and I have to say this was the BEST wrestling event I have ever attended live. (And I say this having been to many WWE secondary PPVs and a couple of Wrestlemanias) The atmosphere was awesome, the talent was meeting and greeting everywhere and it was some of the best wrestling (I'm speaking especially to the 6 Sides of Steel match) I've ever seen live.
TNA pretty much has me as a fan for a long time to come, especially given the boring drivel coming out of the WWE lately. OK, except for King Booker. That will NEVER stop being entertaining....

You can't compare TNA to WWE at all. WWE has fans, an audience, turns a profit etc...
TNA needs to build an audience and get some buzz. I'm not saying that if Angle and Joe fight next month, that that needs to be it...have 'em fight a few PPVs in a row. Build up the money blow off match through multiple matches. TNA isn't going to build buzz through 6 months of Sports Entertainment. They seriously have NOTHING for Joe to do, unless they're gonna put the belt on him. Then after that they have NO credible challengers for the belt. It also doesn't make sense for Angle to go after I dunno, Abyss.
It also isn't like TNA has signature PPVs that the audience waits to buy (like the big 4 for WWE). In fact, if they wait 6 month to build up Angle/Joe, they collide with WM build-up and get washed under. If they wait a year, well...what's the over/under on Angle these days?
I think long builds work for storyline-centric feuds (Megapowers, Sting/Hogan, Hunter/Batista). With storylines that center more on just who's the better athlete, you can build a feud through matches and through in-ring interaction. I mean, Austin and Rock had tons of matches and interaction before their WM main events. In fact, didn't Rock and Austin fight on the Raw after the 98 Survivor Series? Just checked Zed's recap and they certainly did. Did that ruin anyone's buzz?
Rock and Mankind fought ever week in '99 and had got great buys. Austin and Hunter fought for the first time at Armageddon '00 and then rematched at No Way Out '01. Vince and Austin fought for the first time at Now Way Out '99.
And I point out, in 1983 Vince McMahon didn't tell Hulk "we're gonna keep the belt on Sheik till the maximum audience is there to view it, we're gonna build up your chase." The company would have never taken off.
ECW certainly built up the buzz for Van Dam vs Tazz or Van vs Awesome, and that certainly didn't work out.
Same with TNA, if you have a match that people want and that you can get some smoke for your promotion, you gotta do it. This is especially true with Angle in tenous health at best.
And Justin re: your examples, WCW didn't wait till Starrcade '94 to book Ric Flair/Hogan. They booked the match as soon as they could and then rematched it into the ground and got some buzz for the company (not that I exactly agree with THAT decision.)
Anyway, to tie in my original point about fans complaining about builds: I'm not a TNA or WWE stockholder. If they shoot themselves in the foot with making money, it doesn't really affect my life. I just want to be entertained. If TNA doesn't want to build up Angle/Joe for 6 months, then I might think it's foolish financially but I don't think it ruins the match. We don't need to Sports Entertain this up.
Also a reason for waiting on matches is that in wrestling you have some ppvs that are more important than others. In UFC it's just UFC __ (insert number here) and there's nothing special about it. In WWE they should want to save their biggest matchups for Wrestlemania, and Summerslam and so on. Unfortunately TNA has only hyped Bound for Glory as a ppv above the rest and I don't think you can wait an entire year for Joe/Angle so I'm not sure how long they should hold off on it.

I really don't like the idea of Joe vs. Sting because it's two faces and I don't think it would produce the half people on one side and half people on the other side. That match would probably just make Sting look really really bad or take away fans from Joe. I'd use Christian as a bridge between Sting and Joe. Christian did win that ladder challenge didn't he? He still has a feud with Sting that hasn't been resolved too. So I'd go Sting/Christian then Christian/Joe then Joe/Angle. Joe/Angle can still feud in the meantime but not have their match until the third ppv.
Also they could stretch out the feud over several months where they wrestle three times. The first one Joe could beat Angle, the second one Angle could end Joe's streak. Then you have big time feud going into the third match. I know some people think Joe's first loss should be to someone who needs the rub but I don't see anybody who isn't already over that really deserves to beat Joe or that TNA would let beat Joe anytime soon. I mean really who could use the rub? Sting, Jarrett, Christian, Angle, Rhino, AJ, and Daniels don't need it. After that you drop down to guys like Shelley, Starr, and Senshi who I would love to see beat Joe, but I don't think TNA would do it. If there was somebody they had in mind to end Joe's streak then they could also use Angle to interfer leading to the loss.
