Batista/Funaki/Nunzio/Colin Delaney should be a stable full-time. They could have awesome backstage segments, a la the Brain Trust on Scrubs (Batista = Janitor, Delaney = Ted, Nunzio = The Todd, Funaki = Doug).
Sal vs. Santino was quite fun. I don't really care for celeb wrestling matches (with exception of Keven Federline, who was quite good) but I really liked this. Not enough to want to see it again, but still.
Cole on SmackDown works to gin up RAW/SD dissension, but the WWE needs to put Striker or Grisham on RAW to keep it up. I don't enjoy Cole on the Friday show, especially when he's doing this jerk shtick (my name band name).
