How do they compare to Shawn Michaels career? This is just off the top of my head:

Started face Rocker.
Heel to HBK/DX
Injured/retired
Face comeback til WM 27 retirement?

HBK turned heel for, like, a month to face Hulk Hogan at Summerslam one year. The Raw after that match he smiled, shrugged, and went back to normal.

Would that even really count?

I had a list I was going to post of Undertaker's, just because it was easy to compile because I had previously been trying to figure out every person he had feuded with. It was like 4 turns in his career. I don't remember all the details, but it was something like:
Started heel. Turned face two years later when he helped Miss Elizabeth escape from Jake Roberts (or someone similar). Turned heel when he joined Mr. McMahon's Corporation (the Corporate Ministry days).
Turned face when he returned from an absence (riding a motorcycle!) and attacked Triple H.
Turned heel somewhere that I can't remember off-hand.
Turned face over a two-week period involving a match with Jeff Hardy (precipitated by Hardy kicking him into Tommy Dreamer's vomit), shaking John Cena's hand following his first match, and then the rematch against Hardy in the infamous ladder match, where Taker raised Hardy's hand following the match.
I think he's been face ever since that, even though he inexplicably killed Paul Bearer by drowning him in cement (he got better!).

Edit: Come to think of it, if it was possible to make an infographic showing every WWE wrestler's turns chronologically, that would be crazy awesome looking I think.

He made Jim Ross kiss Vince McMahon's butt at the end of 2001.

The InVasion saga had just ended, so the WWF was short on heels. Undertaker was feeling hurt that Vince hadn't confided in him about the plan to have Kurt Angle infiltrate the Alliance and destroy them from within. I loved that year of heel-Taker.

Most heel/face turns in the history of the world belongs to Jerry Lawler in the Memphis days. Nobody has turned more, and nobody is as effective as a heel and face as Lawler.

(Disclaimer: Reading this, Vince Russo will appear to have much more wrestling knowledge than he does. Plot devices are a son of a bitch though, you know that? However, to keep the anti-Russo fans happy, he will speak like Vic Venom wrote.
