You could catch a Jazz game, no NBA season isn't for another month or two. You could ski, no, that's not for another 3 months. Salt Lake doesn't have a whole lot going on. However, it's only a couple of hours away from Wendover, Nevada, so if you have time, you could always hit I-80 and head to the Peppermill. Along the way you'd pass the Bonneville Salt Flats...where they do all the land speed records.
Are you a history nut? Lots of it there. The Mormon temple is there, and there's lots of people there who'll talk about the history of thier church...and they won't do their usual "Join our church" spiel. It's very fascinating.
A quick note: before you head out there, get a map and get accustomed to the way their streets are named. You'll thank me later; it's very, very confusing.

Yeah, Utah has the weirdest addressing system ever. 2500 West 1500 South. What?
It's a bit early for fall colors in the canyons, but the canyons are still a nice drive even without them.
Temple Square is interesting and free. There are organized tours, or just wander around. Go into the Joseph Smith building and head up to the 10th floor for an excellent overlook of everything. Have lunch at the Garden while you're up there.
On Thursday evenings, you can attend the Mormon Tabernacle Choir's weekly rehearsal at the LDS Conference Center. Even without the Choir, the building is something to see.
You can have lunch at the "World's First KFC" on State St at 3900 South. It's actually a new building, but they have all sorts of interesting stuff from KFC's history in there.
I would also suggest onion rings at the Iceberg Drive-Inn. You can also get one of the original Pastrami burgers at Crown Burgers.
I'll third the Temple Square recommendation. Also, the huge public library right downtown is fairly cool...that is, if the bomb blast last week hasn't shut it down.
Head to the Delta Center and rub the John Stockton statue. People didn't stare at me too much...honest.

I wasn't even aware of a Stockton statue, when did that go up, and when is the Malone one to follow? (I'm assuming, although his tenure Lakerland may change that.)
*EDIT* Googled to find the Stockton statue, and found the Malone one had already been erected. Lived in Northeast Nevada, Western Wyoming, and Utah, and have always been a Bulls fan, but always have held a special place in my heart.
SLC has trendy shopping, trendy food, and trendy nightlife. If any of that appeals to you I can PM you some recommendations. Other than that, I'd say check out that very first Kentucky Fried Chicken. I don't know if I'm being sarcastic or not.

There was a three week period where Monday through Thursday, from 5:00 to 6:30 pm, my friends and I would watch nothing but Family Feud. Two Family Feuds with Dawson and Combs on the Game Show Network and then Borland on at 6:00.
