That's the kind of stuff that generally gets put in the Random folder. Neither CRZ or I are really into MMA, so I can't see us ever starting a forum for it.
However, don't let us stop you from setting up your own board and putting a link in your sig. Maybe MMA is your niche on the internet...

Guys you might have heard of in wrestling that made their names in MMA iclude Ken Shamrock, Tank Abbot and Dan Severn. Hope that helps Pheadfred!  .
