Seasoning only would be my usual preference, but I'll sometimes indulge in/cook up a variety of sauces, particularly of the pepper-based variety. | Lise

If you don't trust the meat that much you should order something else. Pink in the middle is not bloody, it is delicious meat juices that have this thing called flavor. dMr, when you're in the mood for a fillet & want to ensure rare but not cold, ask to butterfly the steak for an even heat and a nice rare preparation.
Rare to Medium-Rare for me depending on the fat content of the cut. | Torchslasher

Ditto. My wife has been converted from ordering well done. She was at a dinner at one of the best steakhouses in Dallas and the waiter wouldn't let her order it well done. He told her if she wanted steak cooked beyond medium to order something else. She fell in line and hasn't gone back to well done since. | Grimis
