Here it is

Southwestern Turkey Soup

1 1/2 cups shredded cooked turkey
4 cups vegetable broth
1 (28 ounce) can whole peeled tomatoes
1 (4 ounce) can chopped green
chile peppers
2 roma (plum) tomatoes, chopped
1 onion, chopped
2 cloves garlic, crushed
1 tablespoon lime juice
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin
salt and pepper to taste
1 avocado - peeled, pitted
and diced
1/2 teaspoon dried cilantro or a bunch of fresh
1 cup shredded Monterey Jack cheese
(some people add some corn as well)

Directions
1. In a large pot over medium heat, combine turkey, broth,
canned tomatoes, green chiles, fresh tomatoes, onion, garlic and lime juice. Season with cayenne, cumin, salt, and pepper. Bring to a boil, then reduce heat, and simmer 15 to 20 minutes.

2. Stir in avocado and cilantro, and simmer 15 to 20
minutes, until slightly thickened. Spoon into serving bowls and top with shredded cheese.

I like to serve it with cornbread

The Beer Store here in Ontario ran a promotion about getting Dad a gift certificate for Fathers Day. My father-in-law got one and was most happy about it.

What a great push by the Beer Store!!!! What every man really can use...

BTW, I did not get one. I sit now at my desk looking at the tin can my son decorated to keep my pens and pencils in. Fabulous!!!!

Copying Pieman, Thanks Dunk. Unfortunately, I didn't see this until after I started the big batch of Smoked Ham and Lentil soup, but I will have to try this recipe when I next make the big pot o' soup.

I got homemade cards and a new toolbox from the kids and wife. My parents gave me a new AeroBed for camping...one of the big ones!

And my car gave me...a $375 repair bill for a bad alternator and killed battery...oh well...

We're trying thr Turkey Soup first.

I'm working out of my NJ office today instead of having to go into NYC so during my extended lunch hour I am headed over to Home Depot and EMS for a little late Father's Day shopping for myself.
