My kids gave me a pencil holder that made out of popsicle sticks that they colored themselves. My wife made me her new best thing she makes- the astounding Burrito Casserole.

I got me some homemade art from the 2 year old - it looked like a shirt and tie (which is pretty cool since I do have to wear a shirt and tie to work (and pants for that matter)).

The two boys got me some baseball cards which they immediately stole. I will never see those again.

And my wife made the out of this world chili. There it goes again.

DR: Oh Jesus, it RULES.

Burrito Casserole

a pound of ground beef, a can of tomato sauce, a 10-12 oz container of sour cream, a lot of shredded cheese a drained can of pinto beans , 3 or 4 tortillas and a package of dry taco seasoning. Preheat the oven to
350. Brown the ground beef in a skillet, mixing it with 1/2 of the taco seasoning. Mix the other half of the taco seasoning with the tomato sauce. Once this is done, layer the bottom of a round casserole dish with tortillas, and top it with a mix of 1/3 of the beans, 1/3 of the sour cream, 1/3 of the cheese, 1/3 of the seasoned beef, and 1/3 of the tomato sauce, cover it with another tortilla...repeat this twice so you've got a triple layered casserole . The top layer should not be covered with a tortilla, BTW. Cover the dish and bake (at 350) for about 30 mins.

That recipe is a truly righteous dish. Of course, I really liked the Gingersnap and Bourbon encrusted baked ham that we had for lunch and dinner today. As for presents, I got a cute homemade picture and original Happy Father's Day song from the 5 year old and a plethora of dirty diapers from the 22 month old boychild.

Dean, here you go.


1 city style (brined) ham, hock end*
1/4 cup brown mustard
2 cups dark brown sugar
1-ounce bourbon (poured into a spritz bottle)
2 cups crushed ginger snap cookies
Heat oven to 250 degrees F.

Remove ham from bag, rinse and drain thoroughly. Place ham, cut side down, in a roasting pan. Using a small paring knife or clean utility knife set to the smallest blade setting, score the ham from bottom to top, spiraling clockwise as you cut. (If you're using a paring knife, be careful to only cut through the skin and first few layers of fat). Rotate the ham after each cut so that the scores are no more than 2-inches across. Once you've made it all the way around, move the knife to the other hand and repeat, spiraling counter clockwise. The aim is to create a diamond pattern all over the ham. (Don't worry too much about precision here.)

Tent the ham with heavy duty foil, insert a thermometer, and cook for 3 to 4 hours or until the internal temperature at the deepest part of the meat registers 130 degrees F.

Remove and use tongs to pull away the diamonds of skin and any sheets of fat that come off with them.

Heat oven to 350 degrees F.

Dab dry with paper towels, then brush on a liberal coat of mustard, using either a basting brush or a clean paint brush (clean as in never-touched paint). Sprinkle on brown sugar, packing loosely as you go until the ham is coated. Spritz this layer lightly with bourbon, then loosely pack on as much of the crushed cookies as you can.

Insert the thermometer (don't use the old hole) and return to the oven (uncovered). Cook until interior temperature reaches 140 degrees F, approximately 1 hour.

Let the roast rest for 1/2 hour before carving.

*Cook's note: A city ham is basically any brined ham that's packed in a plastic bag, held in a refrigerated case and marked "ready to cook", "partially cooked" or "ready to serve". Better city hams are also labeled "ham in natural juices".



Yield: 10 to 15 portions, depending on beginning weight
Prep Time: 15 minutes
Cook Time: 6 hours

I got homemade cards, pencil holders and bookmarks, a Cardinals (Football) hat from my 6 and 12 year olds, and a promise from my wife that she would oversee getting our fornt lawn landscaped (I have done a fantasrtic job of killing the grass!). My 1 year old just looked at me and smiled and gave me a hug, probably the best gift of all...

Got a golf shirt and golf balls from my kids (ages 2 & 4) along with a couple of great crayon & sticker drawings. Got to go to the driving range and then they took me out to lunch (I paid) and I had a great Caribou London Broil. The best gift of all came two weeks ago when my wife's doctors diagnosed a problem that actually had me about one to two hours away from losing her for good.

On the cooking front, it certainly looks like there is some considerable culinary talent out there in Wienerville. I actually will have two of my recipes (Curried Carrot Soup and Southwestern Turkey Soup) appear in a new cookbook put out by the people at allrecipes.com later this summer.

I got another present today when we found out that the reason my wife could no longer feel her hands or her feet was a herniated disc in her lower back which will respond to noninvasive treatment instead of something more severe that might have required spinal surgery. God, I love 17 year old drivers who blow stop signs, t-bone a white minivan holding my wife and two children at 11:30 AM on a bright sunny day, claim they couldn't see the WHITE (freshly washed and waxed) minivan because it was too dark, and don't have to pay a penny because of that asinine thing known as no-fault auto insurance.

On a lighter note, and at risk of turning this section of Wienerville into a recipe forum, dunkndollaz, please let us know when we may see the recipe for Southwestern Turkey Soup as that sounds truly spectacular and like something that I need to add to my soup arsenal.
