There was a huge stink made before the PS3 launch, because Square Enix did its benchmark test on Final Fantasy VII characters running in what would become the FFXIII engine, which led to all kinds of speculation that they were working on an update for it.
They got asked about it a bunch of times, and they shut the idea down pretty firmly at that point, I think. But it's sort of inevitable I think. Eventually they'll come out for some iteration of the DS or PSP (or less likely a console), but I don't see it happening for a generation or two.

SE hasn't really made any console remakes in a while. I don't think they will for still a while. And if/when they do, I think it will be 7 and 8 getting the treatment.
