A couple of my favorites (the Dodgers and the new Patriots unis) are out already. I think that out of what's left I'd have to go with the Red Wings as the best.

NFL oldschool - Bears vs. Raiders - Gotta go with RAIDERS.
NFL Newschool - Broncos vs. Eagles - EAGLES I guess... But the Charger's uni is very underated.
NFL - Red Wings vs. Bruins - RED WINGS are cool.
NBA - 76ers vs. Celtics - Classic CELTICS
MLB - Cubs vs. Cardinals - I really like these two choices but going with the CUBS.
Wild Card - Chargers(powder blue) vs. Notre Dame (green) - CHARGERS THROWBACKS rule all!
College Football - Michigan vs. Penn St. - PENN ST. easily.
College Basketball - Duke vs. North Carolina - This one is the toughest one of them all. Certainly Duke is Duke they've been on TV more then Leave it to Beaver.. Reruns... But I have to go with NORTH CAROLINA

(Even if Ron Wolf robbed us of one stripe on the sleeve, and the Lombardi-era double striped socks are long gone...sigh.)
