I have a DVD burner, as well as a CD burner.

I want to take various WWE Wrestling DVDs, and burn them to VCDs, not before cutting all the advertising, and the unavoidable "Don't try this at home" ad, and keep the matches intact.

Is there any way I can do this without screwing up anything?

I can't comment on whether it's any good or not because I've never actually used it, however I've been told that mnoGoSearch is pretty good. As long as you're running some sort of Unix, it's free.
