If someone finds themselves attracted to children, it's not like most of them decide they're going to be child molesters and ruin kids lives. Usually they do one of two things: #1, convince themselves that sex with kids is not wrong, just misunderstood or whatever or #2) realize that something is very, very wrong with them and try to fight against it. One way to do this is by entering a profession where you're supposed to not be a sexual person. They figure "I'll be a priest and be celebate, and that will help me not be attracted to children, or at least keep my mind off of it, becuase priests aren't supposed to think about sex."
Now, does this work? I'd say judging from the amount of scandals lately, no. I'd say the absolute only way to deal with being a person like that is to put yourself in a profession, neighborhood, etc. where you don't come into contact with children at all, and even then it's probably not enough. But I can understand being desperate enough think that being a priest would help.
Incidentaly, this is also the reason the priesthood attracts a lot of gays. Please note that I'm not at all in any way equating being gay with being a pedophile. However, there are plenty of people out there who do think something is terribly wrong with them when they learn they're attracted to the same sex, and try to fight against it in the same way.
