Out of the three you mentioned, Mallrats, but if we bring the whole View Askew universe into the picture, Dogma is my favorite and it's not even close.

Out of the original trilogy, I will go with the one I liked the least initially, but has continued to grow on me while the other two shrank away.
Mallrats.
"You fuckers think just because a guy reads comics he can't start some shit?"
Plus, the DVD commentary has to be heard to be believed. Absolutely awesome.
If we include the rest of the Askewniverse, then Dogma might change some things. It's dramatic moments, like Affleck's two "War on God" speeches, resonate with me, and Lee's extended rant on the deleted scenes about the nature of hell is an amazing speech, probably Smith's best work.

I haven't seen Chasing Amy yet, but out of the remaining two, Mallrats was the better one (for me). The whole dating show bit with Lee's character made it for me.

Mallrats is the one that brought me into View Askewniverse and probably the one i've seen the most out of all. I actually still haven't seen Chasing Amy. I just haven't gotten around to it, that's all.

I realize this thread was initially created before we got the 6th addition to the family, but for me, it's Clerks 2 and it's not even close.
2 words: Donkey Scene. Those climactic (oooh cake) 10 minutes where the entire movie comes together might be the most hilarious amazing scene in cinematic history. Throw in Pickle Fucker, the LOTR vs. Star Wars rant, and every thing Elias says or does, and you have Kevin Smith's pinnacle.

Of the original three, I'd go:
1- Clerks/ 2- Mallrats/ 3- Chasing Amy
Add in the others and it goes:
1- Clerks/ 2-Dogma/ 3- Jay & Silent Bob Strike Back/ 4- Mallrats/ 5- Chasing Amy
Haven't seen Clerks 2 yet. Chasing Amy is the only one I wouldn't see again in a heartbeat. Decent movie but really depressing at times. I'm with JayJayDean, Clerks wins it for me due to Randall. Can't get enough of him.

Clerks. Although I don't know that I've ever seen Mallrats all the way through.
Chasing Amy was some brilliant writing, but just didn't sit well with me overall. I was just kind of pissed off at the end.
Clerks 2, however, is by far Smith's funniest work, and the one I'm most likely to be found repeat viewing. Jay's out-of-nowhere semi-nude dance had me on the floor.

Clerks, definitely. Chasing Amy is #2 - not a fan of the Affleck/Joey Lauren Adams story, but Jason Lee is comic gold in that movie. Mallrats is #3 only because I hate the London brothers with a passion.
But J&SB are my favorite parts of the whole Jersey series, so J&SBSB is definitely my favorite of all of them.
